Apple and Coconut Burfi

One of the most  popular Indian sweet is made with coconut, and additional of apple makes it more special, made with just few handy ingredients and it takes less than an hour. Indian desserts can be daunting and difficult for many , but this one is such a winner. I made this apple and coconut burfi long back in Bhutan , where apple grows in abundance every season. And I used to add apple in many dishes from sweet to savory. This burfi was irresistible and you just cannot have only one , you will ask more and more . 




It’s a delectable , soft and fudgy oooey gooey kind of  dessert that hides the goodness of grated apples within. Many people detest apples and this is the way of making them like apples. 



Make this apple burfi this festive season to keep the kids and their friends entertained when they visit you or you can serve after your everyday meals. 

Ingredients: 

2 cups grated apples
1 cup freshly grated coconut / coconut powder
1/2 cup milk powder
1/2 cup sugar
2 tablespoons ghee (clarified butter )
Few strands of saffron mix with 2 tablespoons of warm milk 
2 tablespoons chopped cashew nuts
Few chopped almonds for garnish 
Few silver leaves for decor ( optional )

Method: Heat ghee on skillet , add grated apples, coconut freshly grated or powder , stir it well. Cook on low flame. Continue stirring it till it is half cooked . Now add sugar , milk powder and saffron mixed milk, chopped cashew nuts . Cook it till you get binding texture . Once cooked transfer to plate or any baking tin . Evenly spread it with spatula . Place silver leaves on top of it carefully and add chopped almonds over it .

 Cut into square size and serve .
