Eggless lemon sponge cake with lemon flavoured custard frosting

This  classic eggless lemon cake is soft , spongy and a delectable cake without using any eggs, perfect for any occasion: brunch potlucks, holiday gatherings , or even a treat for your loved ones. I love desserts, and among the thousands of desserts made world over, cakes are always my most favourite and that is too without icing. The soft , spongy texture and tangy lemony flavour of this cake will definitely bring smile in your face. 




I love this cake because it’s super easy to make and uses only basic ingredients. You can make it ahead of time, refrigerate it, and serve it when you are ready. 





I made a little twist in this cake by icing it with custard instead of buttercream or lemon curd. The slices and zest of fresh lemon ‘kaji nemu locally called in Assamese’ enhanced the flavour. Double dose of lemon. I take this cake to an extra level up by adding fresh lemon slice and made lemon flavoured custard to top the cake. Make sure that your cake is cooled completely before icing the cake. If your cake is not cooled down completely then custard will melt down. 


Ingredients: 

1 cup all purpose flour / almond flour 
1/2 cup custard powder / tapioca flour 
1 teaspoon baking powder 
1/2 teaspoon baking soda
1 cup cooking oil / olive oil 
1 cup milk / coconut milk
1 tablespoon lemon zest 
2 tablespoons lemon juice 
1 /2 cup curd 
1/2 cup sugar 

For custard icing : Make custard by mixing milk , sugar , custard powder and lemon flavour over low flame . Cook till you get thick consistency.

Method for cake : In a large mixing bowl , mix all the dry ingredients first , then add all wet ingredients one by one . Add lemon juice at the end and fold the mixture gently . 

Now transfer in a greased baking tin. Place it in preheated oven and bake at 175 degree C for 30 mins. Check it by inserting toothpick , if it comes out clearly then it is baked . 

Let the cake cool down . Now add lemon flavoured custard on cake with the help of baking spatula. Garnish it with lemon slices . Refrigerate it before you serve to avoid melt down of custard icing .
