Apple crumble cookies

A scratch made cookie filled with fresh apple chunks with cinnamon are totally, insanely delicious.The apple make the cookies wonderfully moist and chewy. Once you taste the first one you might need a double batch because these are going to disappear fast. 







These apple crumble cookies are crispy edged , chewy with the added flavor of a fragrantly spiced apple crumble, it is just addictive. If you prefer you can add plenty of warm spices. I found that, like many cookies, these bake better at a larger, coffee house style size, so double the recipe if you need more than a dozen at a time.







These cookies are utterly delicious with the optional addition of nuts like almonds, walnuts, pecans or hazelnuts. It's got the taste and texture of an apple crumble and it's dead easy to throw together and its ready in just 20 minutes. 



Ingredients:

1 1/2  Apple , chopped 
1 1/2 cup all purpose flour
1 cup cold butter
1/2 cup sugar / brown sugar 
2 eggs
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg 
1 teaspoon baking powder
1/2 teaspoon salt
1/2 oats
1 teaspoon vanilla essence

Method:

In a large bowl, crumble chilled butter and mix with sugar, cinnamon, nutmeg, baking powder, salt , flour and oats. 


Just combine all the ingredients but don't knead it. In a bowl, beat eggs with vanilla essence and pour into crumble mixture. when all the ingredients are almost incorporated, add apple. 

Chill the dough for at least two hours in refrigerator .  Now form balls out of this dough and place onto a parchment paper about inches apart. 


Bake at 175 degree C in preheated oven for about 20 minutes or until evenly  brown throughout . Make about one dozen large cookies.


Sprinkle some powdered sugar and cinnamon on top and serve .
