Baked Beetroot pasta with croutons and cheese

What more are you asking for , when you get super simple, incredibly delectable , packed with healthy stuff and that too stress free recipe just ready in 30 minutes, ideal for a quick dinner or an easy midweek vegetarian exotic one meal dish. I couldn't imagine anything more. Creamy beetroot sauce paired it with wholewheat super delish pasta and croutons topped it with lots of cheese mixed herbs. This tastes delicious and when you dig it , you will fall in love with the colour of this pasta dish. 




Pasta is not only kid's favorite food, it is a great source of protein and carbohydrates which provide you with energy throughout the day. It helps not being tired or not having energy. It is great to eat wholewheat pasta to include more fiber in your diet. In addition of health benefits, pasta is super delicious and always satisfy you. 




The glorious beetroot sauce is the star of this recipe .They are not only super delicious especially when paired it with cheese and looks super pretty because of pink colour, packed with a lots of nutrients, high in fiber and low in calories, improve digestion and help to regulate your blood pressure levels.   




You must thinking that I am promoting healthy stuffs ?? And I can tell you yes... because with taste you are getting lots of  vitamins and nutrients too in this one dish meal. 



I love to serving this recipe for guest too, as you can prepare it very well and simply bake it when you wanting to serve. This is obviously one of my favourite dish to make with beetrrot because it is not only simple to make but has so much flavor !! I'm sure you like it as much as I do !!




INGREDIENTS: 


2-3 cups pasta preferably wholewheat / anyone of your choice 
1 large onion
1 teaspoon olive oil / butter 
2 boiled  beetroots
1 1/2 cups milk / almond milk 
4-5 garlic 
1 cup  croutons / bread crumbs 
salt to taste 
1 teaspoon mixed herbs 
1 teaspoon black pepper
1 cup mozarella cheese 

METHOD : 

Bring a large pan with water and salt. Cook the pasta according to package instructions. 
In a frying pan , fry chopped onion in oil till you get brown colour. 
In a blender, put the chopped boiled beetroots,  garlic, salt,  fried onion and milk.   Blend it  till you get smooth texture. Add more milk if you require to get smooth sauce like texture. 

Once the pasta is done cooking, drain it and then transfer in a large bowl, pour the beetroot sauce, add salt and pepper according to taste, mixed herbs and combine it well . Transfer in greased baking tray.  Topped it with cheese and croutons to get crispy and crunchy texture. 

Bake it in oven at 180 degree C , until the cheese is melt and croutons turned into crispy. Serve it and enjoy.
