Eggless nutty chocolate cake

Have you try moist and squidgy eggless chocolate cake with nuts filled ganache ?? 






Lets  try this  eggless version of chocolate cake today which is a perfect cake for every occasion, be it a birthday or any celebration.  I gave a little twist to ganache by adding nuts which is absolutely a treat for kids and adults . 



It is one of the quick and easy recipe when you want to make dessert instantly. I made this cake to celebrate my son's monthly birthday as I want to celebrate his birthday monthly till he is three years old.  I was late in office , so when I reached home it was already late evening, so, I chose to bake this eggless chocolate cake. Moreover, the best part of this recipe is that the ingredients are basic and readily available in everyone's pantry. 




The other good thing about this recipe is the batter part which takes not more than 15 minutes. You just need to sift the dry ingredients , whisk in the wet ingredients and then combine the two and bake it, isn't too simple ??

It's simple no doubt , buy you have to keep few things in mind to bake a good eggless chocolate Cake !! If you want to make it more rich and fancy than obviously need to jazz it up with some frosting. Today, I'm sharing with you one of the most easiest frosting which goes so well with this chocolate cake.  You just need a good quality nuts chocolate to make a hassle free nuts filled chocolate ganache and amul cream which is available in normal grocery store. This ganache is really amazing, every kid will love it. 


INGREDIENTS: 

1 1/2 cups all purpose flour
1/2 cup cocoa powder
1 tablespoon baking powder
1/2 teaspoon baking soda
1 cup sugar / brown sugar
1/2 cup vegetable oil / olive oil
1 1/2 cup milk (room temperature )
pinch of salt
1 teaspoon vanilla essence 

For frosting :

1 packet  nuts Amul chocolate /  nuts dark chocolate 
1/2 cup amul cream / fresh cream 
1 teaspoon butter

Method : 

Preheat oven at 180 degree C. Grease a baking dish with vegetable oil. 
In a bowl sift all dry ingredients and keep aside. 
In a bowl, whisk together 1/2 cup oil, i 1/2 cups milk and vanilla essence. Now gradually pour the wet ingredients into the dry ingredients and whisk them together.

Pour it in a greased baking dish. 

Bake it for 30-35 minutes at 180 degree C or check it by inserting toothpick , if it comes out clean than it is baked perfectly.  Remove from oven and let it cool in rack. 

For Frosting: 

Bring water to boil in a medium size pan over high  flame , now place another bowl over pan with boiling water, add chopped nuts chocolate , cream and butter into  this bowl , stir it continuously  till all chopped chocolates melt and mix it well with cream. Reduce the flame and stir it till you get thck smooth texture. 

Spread this nuts filled ganache  over the cake . Add strawberries for decoration (optonal) on top  .
