Baked Sweet Potato and Broccoli Casserole

Oh its a weekdays dinner...and all I want to relaxed in the evening after a hectic day long schedule , so why not something east to make, easy to eat and healthy. So, why not explore something with seasonal veggies . A meatless one-dish wonder and there is no need for another side dish, however a mixed green salad or few hot toasts does complement this dish very nicely. 





Sweet potato and broccoli bake will be a definite favorite for you and your family and it can be just tasty next day in breakfast too. You just need to little reheat it. Grab a beautiful head of broccoli and two to three sweet potato, some herbs, black pepper to make it little spicy cottage cheese , and you are pretty much set.



Give a little twist to regular sweet potato and broccoli with this idea to include in your meal. A meatless version of regular Shepherd pie . 



Ingredients :

2 - 3 sweet potatoes (big size), boiled
1 head of broccoli, cut into small size , parboiled 
1/2 cup  paneer (cottage cheese), grated
1 tablespoons Italian  seasoning / mixed herbs
1 teaspoon chopped  
1/2 cup milk 
Salt and black pepper to taste. 
2 tablespoons butter / olive oil 


Method :

Preheat oven at 180 degree C. 

Now grease the baking dish with butter or oil. 

In food processor , process the parboiled broccoli into coarse . Don't make it fine.
Now, in a bowl, mashed boiled sweet potato with milk, 1 tablespoon butter, salt and black pepper powder to taste, mix it well till the mixture is smooth . 

In another bowl, mix coarsely grind broccoli with butter, Italian seasoning or mixed herbs, salt and black pepper powder. 

Now place a layer of broccoli mixture first in a greased baking tray, then put a layer of grated paneer (cottage cheese ) and the final layer on top of paneer (cottage cheese) is mashed sweet potato. I have used my hands to give a finger impressions on top of it for decor. 

Place a baking tray in preheated oven, and bake it at 180 degree C till you get light golden color on top of it. 

Serve hot.
