Banana pancake ( Kol Pitha )

Banana pancake or you can say  Kol pitha locally known in Assamese community,  this recipe is super quick and easy to make with wholesome ingredients and it’s egg less . This eggless pithas are one of our favourite easy and healthy to eat specially with tea , we like to offer our guests these delicious pitha with tea  and to kids as well as





These kol pitha / banana pancakes are sweet and soft , traditionally made with over ripen banana and jaggery. We don’t add sugar because of its natural sweetness that comes from over ripen banana . You feel free to use granulated sugar, coconut sugar or you can totally skip sugar too . You can serve with honey or maple syrup too if you preferred more sweet . The shape of these pitha are usually smaller  in size same like pakodas , but to eat in breakfast we make it in a bigger pancake shape . 



Next time , when you have over ripen banana just don’t throw it , use it in a delicious way. You can add different colours to make it more attractive for kids . It can be a healthy tiffin ideas too for kids . 






Ingredients:

1 1/2 cups whole wheat flour 

1 cup mashed ripen banana 

1 cup milk 

1 teaspoon baking powder 

1/2 teaspoon salt 

2 tablespoons vanilla essence ( optional ) 

Clarified butter / refined oil for frying 

2-3 tablespoons sugar ( optional ) 


Method : 

In a medium size bowl , combine all the ingredients and make a batter like cake . 

Heat a frying pan preferably non stick over medium flame, add a teaspoon of clarified butter / refined oil . Now pour two laddles batter evenly , low the flame , cover it and cook for a minute or two . Remove the cover and flip it and cook for another 2-3 minutes . 

Repeat with remaining batter and make up to 6-7 pancakes . 

You can drizzle some honey or maple sugar on top of it , if you want .
