Beetroot cake

Beetroot is such a versatile vegetable you can enjoy it in both sweet and savory dishes. In my kitchen, there has been lots for experimenting with new way of eating beets. It actually all started with a fairly classic carrot cake recipe , one day while I was talking cake recipes with my friend, And she told me that why don't you try something more  with beet in dessert as I almost always make something with beet. So, I said lets  make a cake using beet and chocolate this time. And it was indeed beyond yum, and a very fresh tasting take on a carrot cake. 






The combination of sweet earthy beetroots with the familiar taste of buttercream was just heavenly. So, I developed my very own egg less beetroot cake. 




And here it is for your crazy and adventurous taste buds to delight in. Deliciously moist beetroot cake covered with butter cream frosting. Perfectly balanced cake with a lovely layer of buttercream. 


Ingredients:

2 1/2 cups all purpose flour
2  beetroots, boiled , peel the skin 
1 cup sugar/ brown sugar
1 cup vegetable oil/ olive oil
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup curd
1/4 teaspoon salt

Ingredients for buttercream frosting:

1/2 cup butter, room temperature
2 cups icing sugar
1 tablespoon milk

Beat the  butter with icing sugar until combined. Add a tablespoon of  milk to get little creamy texture.

Method for cake :

Pre heat oven to 180 degree C.

Grate the boiled beetroot and keep aside.

In a large bowl, add grated boiled beetroots, vanilla extract, curd, oil and mix it well.

Now in another bowl,  add all purpose flour, baking powder, baking soda, salt, sugar and mix it well. Pour this dry ingredients into wet ingredients . Fold just until everything is combined, don't over mix the batter. 

Grease the baking dish, pour this cake batter into the prepared baking dish. Place the baking dish in preheated oven and bake it at 180 degree C for about 30 - 40 minutes or check by inserting a tooth pick in the middle of the cake comes out clean.

Remove from oven and let it cool. Cut the cake into two parts to do icing in the center.

Now spread icing in center and top with buttercream frosting. I have decorated it with  a little beetroot juice mix with buttercream to make a flower  on top of the cake.
