These muffins are loaded with plenty of proteins and they come together quickly with a handful of ingredients and bake up in just 15-20 minutes.

Ingredients:
5-6 spring roll sheets
1/2 cup butter , melted
3 eggs
3 tablespoons feta cheese
3 tablespoons cheddar cheese , grated
1/2 cup sweet corn
1 small onion, finely chopped
5 garlic cloves , finely chopped
1 teaspoon chili flakes
1 /2 teaspoon black pepper
Salt to taste
1 teaspoon Italian seasoning for serving .
Method :
Preheat oven at 200 degree C .
Greased the muffin tray with cooking oil .
Cut the spring roll sheets into two pieces and apply melted butter with the help of baking brush .
Now place each spring roll sheet in each muffin case of a tray.
In a medium size bowl , beat eggs then add all other ingredients and mix it well . Season with salt .
Pour this cheesy egg mixture onto this muffin case. Don’t overflow it , use just two tablespoons of mixture . Fold the spring roll sheets properly so that mixture doesn’t come out . Apply butter on top of it .
Place it in preheated oven and bake it at 180 degree C for about 15-20 minutes or until spring roll sheets turned into light golden colour .
