Mint pulao (Pudina Pulao)

Mint pulao also known as Pudina pulao in Indian cuisine is an instant one pot delicious meal, it’s healthy , aromatic , flavourful made with rice, fresh mint and few spices. The great way to use up all of the fresh mint growing in your garden or any fresh mint leaves left behind in your refrigerator. 




Mint pulao is always a winner for its simplicity, healthy, refreshing aroma  and taste. It goes well with curd or raita. It’s basically mint flavoured rice with some veggies, decently spiced and potentially spicy depending on your taste. This is a great healthy pulao that can be made in weekdays to save time , and you can even give it to your kids in lunch box. It’s naturally gluten free , healthy , nutritious , vegan and a complete meal itself. You can offer this aromatic , delicious mint pulao to your vegan guests too. In this recipe I used only potato , but you feel free to use anything you like to add. The great way to feed those vegetables to your family .




This mint pulao is super easy to make as there is no much sautéing required. You just blend a bunch of mint and other ingredients to make a mint paste. Then heat up oil in pressure cooker directly , add whole spices and sauté the mint paste for few minutes, dump rice and potatoes and wait for two whistles and your flavourful delicious mint pulao is ready . 


Ingredients: 

1 cup rice ( good quality) 
2  cups water 
2 big potatoes 
1 bunch mint leaves
1/2 cup grated coconut 
3-4 green chilies
1 onion , chopped 
1/2 inch ginger 
5 garlic cloves 
2 bay leaves 
2 cardamom seeds 
4 cloves
2 cinnamon sticks 
Pinch  of turmeric 
Salt to taste 
1/2 teaspoon sugar 
2 tablespoons ghee ( clarified butter ) 

Method : 

Wash the rice and keep aside. 

Cut the potatoes into small square shapes. 

Then make a fine paste of mint leaves, green chilies,coconut , ginger and garlic. 

Heat ghee in a pressure cooker over medium heat. Add whole spices like cardamom seeds , cloves , cinnamon sticks and bay leaves and chopped onion fry for few minutes . 

Now boiled potatoes , mint paste , salt , sugar and turmeric and fry it for a minute , now add  rice stir it well for another two minutes , add water , cover the pressure cooker and cook it for two whistles . Let it cool ,  remove  the cover and stir it well . 

Serve hot !!
