Recipe of Eggless Mango cheesecake

What makes this cheesecake so fragrant  and absolutely perfect is using right kind of Mangoes. No bake mango cheesecake  is an easy version of classic cheesecake. Traditionally cheesecakes are baked in water bath with a  graham cracker crumbs crust and they contains eggs along with cream cheese. Gather around mango lovers, I have got the perfect to celebrate mangoes today. Easy egg free , gelatin free, bake free, mango cheesecake it is totally worth the long name, isn’t it ?? I have tweaked and perfected this recipe over the years and mango is the most important ingredient in  this recipe . 






A super easy and irresistible cheesecake made of  biscuits, mango purée , condensed milk and cottage cheese . If you are using crackers , its important to remember is to pack down the crumbs really well in your cake pan . You can use a flat bottomed glass or bowl to help with this . This cake is a true winner , let’s get started. Before start the recipe prepare a springform pan for setting the cheesecake. Grease the base of the pan generously with butter and keep aside. 





Ingredients: 

For base : 
1 packet digestive biscuits 
1/2 cup clarifies butter / butter 

For filling : 

2 big size mangoes for purée 
3 big size mangoes for little roses 
1 cup fresh cream 
200 grams cottage cheese
2 tablespoons cheese spread
1/2 cup condensed milk 
11/2 teaspoon agar agar

Method : 

Biscuit base for cheesecake. Add a full packet of digestive biscuits in a food processor and process till you get coarse crumbs. Transfer the mixture to a mixing bowl and add melted butter. Combine well . Now place this mixture on to prepared pan and spread evenly. Press it with the help of bowl or glass and make the crust smooth. Chill it for around 30 minutes in refrigerator and let’s prepare the fillings. 

For filling : 

Peel the skin of mangoes , chop it and blend in a blender till you get smooth creamy texture. Keep the mango purée aside. 

Mix 2 teaspoons of agar agar powder in water for around 10 minutes. 

In a blender , add cottage cheese , fresh cream , cheese spread and condensed milk and blend it till you get silky smooth texture. Transfer this mixture into a bowl and add mango purée on to it, gently mix it . 

Now check the agar agar powder, they should be like in jelly form.Heat it gently in low flame until they dissolve completely and mixture turns into gelatinous. Now quickly add the agar agar solution to the cream mango mixture and mix it very well . Pour this batter over the chilled crust , spread evenly with the help of spatula . 

Now decor part , peel the skin of mangoes and thinly slice it and give a shape of roses and gently place it on top of cheesecake and place the cheesecake in refrigerator for around 6 hours , preferably overnight .
