The method and ingredients are simple , and the best part is that my husband enjoy this soup in dinner .

This carrot ginger soup is rich in vitamin C, potassium and antioxidants, which have all been shown to help with immune cell function. Whenever you need a boost or looking for a simple meal enjoy this soup. I’ve been loving it for a simple snack or dinner with a slice of toast. 


Ingredients for making the recipe of carrot ginger soup: 

3 medium size carrots , chopped 
1 medium size white onion 
2-3 garlic cloves 
1 teaspoon grated ginger 
Pinch of turmeric
1/2 cup milk or coconut milk 
2 tablespoons fresh cream 
Salt to taste 
1/2 teaspoon ground black pepper 
2 1/2 cups water 

Method of making the recipe of carrot ginger soup: 

In a pressure cooker , add chopped carrots , chopped onion , garlic cloves , pinch of turmeric and two and half cups of water, cover it cook  till two whistles. 

Once cooled down , blend the cooked ingredients in a blender until you get creamy and smooth texture. 

In a cooking pan over medium heat , pour the carrot mixture, add 1/2 milk / coconut milk , salt , grated ginger and ground black pepper . Give it a nice stir and cook for another two minutes . Add fresh cream after remove from stove ( it’s optional ) . 

Finally serve and enjoy it warm !! You can garnish it with extra freshly ground black pepper or few carrot stripes. 

I garnished it with edible pansy, few carrot stripes and edible flowers from curry tree to give an exotic look .
